The interview will focus on customer service and their management style
The interviews are relaxed, but stay focused on the questions.
I would also suggest visiting some of the restaurants before the interview -Armadillo, Seafood, Taqueria, and BBQ Kirby -just to get a feel.
Tom may consider you for one of the other concepts -as they plan on growing
